Less-Guilt More-Milk “Brownies”

I came up with a goofy name for this recipe because these “brownies” are a little non-traditional and they contain a good amount of oats, which, has been on the list of “foods to eat” for nursing mamas.

Nursing or not, this is a quick and easy recipe for a snack that’ll satisfy your cravings for chocolate and sweets, without as much guilt as a pan of old fashioned brownies-from-a-box!

Ingredients:

• 1/3 c. Natural peanut butter (or other nut)

• 1/2 c. Maple syrup

• 1 tsp. Vanilla extract

• 1/4 tsp. Salt

• 2 c. Milk of choice (I use oat milk)

• 2 c. Rolled oats

• 1/4 c. Cacao powder

• 1 tbsp. Ground flax seed

• 1 tsp. Baking powder

• 1/3 c. Chocolate chips

  1. Preheat oven to 350

  2. Mix peanut/nut butter, syrup and vanilla until smooth.

  3. Add the milk and salt, mixing again until combined.

  4. Next, add the oats, cacao, flax and baking powder. Mix.

  5. Add the chocolate chips and pour into your pre-greased or parchment paper pan.

  6. Bake for 40 minutes or until a fork comes out clean.
