Easy Homemade Jam Bars
No matter where we buy our groceries, there are always tempting snacks at every corner. That’s why I had to try something new; taking our snacking matters into my own hands and cutting back on the processed sugars.
Below is a list of the ingredients you’ll need, and the steps and to prepare these very yummy snack bars for the whole family.
Ingredients:
2 cups - rolled / old fashioned oats
1/4 cup - honey
1/4 cup - peanut butter / nut butter
1/4 cup - almond flour / whole wheat flour
1/2 tsp. - cinnamon
1/4 tsp. - baking powder
1/4 cup - oat milk (or other dairy/non-dairy) milk
1 tsp. - vanilla
2/3 cup - your favorite fruit jam
Step-by-step:
Line an 8 x 8” baking pan with parchment paper, leaving a couple inches on each side so you can lift the bars out after they’ve baked and cooled.
Place the oats into a blender (I LOVE my Ninja blender!) or a food processor and grind into a coarse flour. 10-20 seconds should suffice.
Combine the honey and peanut butter in a medium bowl and microwave for 15 seconds.
Pre-heat your oven to 350 degrees F.
Add the oats and remaining ingredients (EXCEPT the jam) to the bowl of peanut butter and honey. Stir the ingredients together until they’re well mixed and form a dough.
Set aside 1/2 cup of the batter you mixed.
Spread the bulk of the batter into the bottom of your prepared baking dish. Using a plastic glove or your clean bare hands to work and press the dough to the edges works better than trying to do it with utensils. Press it from the middle outward until it’s covering the 8x8” pan.
Spread the jam on top of the dough and then crumble the remaining 1/2 cup of dough on top of the jam.
Pop it in the oven for 22 minutes. Once it’s finished, remove it from the oven and let it cool completely in the pan.
Lift the bars out by the extra parchment paper and cut them into your desired shape with a sharp knife.
